How to Preserve Eggs for 2 Years in Jars: 2 Perfect Recipes!
Eggs are a nutritious and versatile food, but their shelf life is also limited. If you want to always have fresh eggs on hand, without worrying about them spoiling or not being able to be found in the store, we offer you two simple and effective methods to preserve eggs for 2 years in jars. These methods use natural and safe ingredients that will protect your eggs from bacteria and fungi and preserve their nutritional qualities.
Recipe #1: Preserve raw eggs in slaked lime!
This traditional method consists of preserving raw eggs in slaked lime, which forms a protective film around the shell and protects them from rotting. Slaked lime is an alkaline substance that kills bacteria and fungi.
You will need:
– 30 fresh, unwashed eggs;
– 2 tablespoons of slaked lime or slaked lime powder;
– 700 ml of water.
Method of preparation:
- Buy eggs from farmers, not from the store, because they do not need to be washed! Washing eggs removes the natural protective layer of the shell and makes them more vulnerable to infections. If the eggs are very dirty, clean them with a dry brush.
- Gently place the eggs in the jars, taking care not to break them.
- Put 2 tablespoons of slaked lime in 700 ml of water and mix well. If you are using slaked lime powder, filter the solution through a fine sieve to remove all impurities.
- Pour the slaked lime over the eggs. Make sure that all the eggs are completely covered with the given solution. The slaked lime will form a protective film around the eggshells. This way, they will not spoil.
- Close the jar tightly and store it in a dark, cool place until use. Do not expose the jar to light or heat, so as not to alter the quality of the eggs. Eggs preserved in this way can last up to 2 years!
When you want to use an egg from the jar, remove it with a spoon and rinse it well under cold water. You can then use it like a normal egg, to make an omelette, cakes or other recipes.
Recipe #2: Preserving hard-boiled eggs in brine with vegetables!
This method is a method of preserving hard-boiled eggs in brine with vegetables, which gives them a delicious taste and a beautiful color. Brine is a solution of water, salt and vinegar that has antibacterial and preservative properties. Vegetables add vitamins, minerals and flavors to the eggs.
You will need:
– 20 eggs;
– top;
– vinegar;
– 2 carrots;
– 1 beetroot;
– 5 cloves of garlic;
– black peppercorns.
Method of preparation:
- Boil 20 eggs in water with a teaspoon of salt for 12 minutes. This will give you hard-boiled eggs that will keep better.
- In the meantime, grate two carrots and a peeled beetroot in a coarse grater. Also cut the peeled garlic cloves into slices. These vegetables will give color and flavor to the eggs, but also vitamins and minerals.
- Peel the eggs and let them cool a little.
- Sterilize the jars in the oven at 100 ° C for 30 minutes. Choose large, clean jars that can hold more eggs and vegetables. We have 700 ml of dough.
- Place peppercorns and garlic at the bottom of each jar (to taste). Then fill them with eggs and garnish with carrots, beets or leave them plain. Add a teaspoon of salt and 2 tablespoons of 9% vinegar to each jar, then fill them with hot water.
- Close the jars tightly with lids and place them in a saucepan covered with a tea towel. Pour hot water over them so that it reaches the level of the “hangers” of the jars. Put the pot on the stove and sterilize the cans for 15 minutes from the moment the water boils.
- Carefully remove the jars from the pan and let them cool completely. Store in a cool, dark place until ready to use. Eggs prepared this way can last up to 6 months!
