Acma Rezepte
Ingredients for the acma’s:
approx. 1000 g flour
2 tsp. sugar
1 tablespoon salt (lightly heaped)
1 cube of yeast
200 ml oil
2 eggs size M (put away 1 yolk for coating)
250 g yogurt
250 ml lukewarm milk
Filling:
Soft cheese and chives
For brushing:
the reserved egg yolk
For sprinkling:
Chicken bacon, chives or black cumin and/or sesame seeds.
Preparation:
Mix the milk and sugar. Then dissolve the yeast in it and let it rise for about 10 minutes.
Add the remaining ingredients (except for the separate egg yolk) and mix everything in a food processor and knead into a smooth dough.
With lightly oiled hands, work the dough round and let rise in the bowl for about 60 minutes in a warm place.
Lightly oil the work surface and place the dough on it, cut off pieces of dough and shape them into balls. Let rise for another 15 minutes.
Now press the dough flat into an oval shape, fill with the cheese and chive filling and roll up lengthwise. Close the roll at the ends and twist it once or twice. Then twist into a kind of knot or bring the ends together.
Brush with egg yolk and sprinkle with bacon.
Finally, bake the Acma at 200° for about 25-30 minutes until golden brown.
