Delicious Genoa Recipe
A delicious and simple sponge cake recipe to use for all your desserts.
Ingredients

125 g caster sugar
125 g flour
Preparation
Mix the eggs and sugar in a saucepan and bring it to a medium heat and whisk these two ingredients quietly until the temperature is close to 50 °C.
To know the temperature, don’t panic, there are two solutions. Either you have a pastry thermometer, and you just have to check the temperature regularly until you reach 50°C, otherwise, there is simpler, take the temperature with your finger. Knowing that our body temperature is 37°C, the sensation of heat on the finger should be warm, but far from burning. As soon as you feel a good heat on your finger, remove the pan from the heat.
Pour the mixture into a bowl and beat with an electric mixer until completely cool. The preparation becomes whitish and holds together.
Meanwhile, weigh the flour and sift it with a fine sieve. Butter and flour a sponge cake mold. A mold between 20 and 25 cm in diameter.
When the eggs and sugar preparation has cooled, add the flour gently with a wooden spatula in 2 or 3 steps. Bake at 180° for 15 to 20 min.
