Lemon Cookies: Tasty and Easy to Prepare!
Soft and lemon flavored cookies, perfect for a breakfast or a snack. With their delicate flavor and melting texture, they are easy to prepare and will please everyone.
Ingredients
- 2 eggs
- 60g (½ cup) sugar
- 50 ml (3 tbsp.) lemon juice
- 30 ml (2 tablespoons) vegetable oil
- ½ lemon (zest)
- 1 teaspoon (5g) baking powder
- 210 g (1 ⅔ cup) all-purpose flour
- 50 g (¼ cup) cornstarch
- 120 ml (½ cup) milk
- Sugar for sprinkling
Preparation
- Whisk the eggs with the sugar, lemon zest, vegetable oil and lemon juice.
- Mix flour, cornstarch and baking powder separately.
- Add the dry ingredients to the egg mixture and stir to combine.
- Reserve the dough in the refrigerator for 30 minutes.
- Cut the cooled dough into pieces and roll it into balls.
- Place the cookies on a baking sheet and bake for 15 minutes at 180°C/350°F.
- Let the cookies cool, then dip them in the milk and cover them with sugar.
