Sugar-free chocolate avocado mousse

Ingredients:

2 ripe avocados
1/2 cup cocoa powder (unsweetened)
1/4 cup almond milk (or other plant-based milk)
1/4 cup erythritol or stevia (or other natural sweetener)
1 teaspoon vanilla extract
1 pinch salt
Optional: fresh berries, chopped walnuts or almonds for decoration
Preparation:

Cut the avocados in half, remove the pit and spoon the flesh into a blender or food processor.
Add the cocoa powder, almond milk, sweetener, vanilla extract, and salt.
Blend until smooth and creamy. If it’s too thick, add a little more almond milk.
Taste and add more sweetener or cocoa powder if necessary.
Divide the mousse into glasses or bowls.
Refrigerate for at least 30 minutes to set.
Garnish with fresh berries, chopped nuts, or almonds before serving.
