Making Garlic Eggplant
Garlic Eggplant is a simple but delicious dish that is perfect as a side dish or even as a standalone dish. Here is a basic recipe that you can easily make:
Ingredients:
1 large eggplant
3-4 cloves of garlic
3-4 tablespoons of olive oil
Salt, pepper to taste
Fresh parsley (optional)
Preparation:
Preparing the eggplant:
Wash the eggplant and cut it into approx. 1 cm thick rings or cubes.
If you want the eggplant not to be bitter, salt the slices and let them stand for 20-30 minutes. Then rinse and wipe dry.
Preparing the garlic:
Peel the garlic and chop or crush it.
Frying:
Heat the olive oil in a frying pan.
Add the eggplant and fry on both sides until golden brown.
Add the garlic and fry for another 1-2 minutes until fragrant.
Season with salt and pepper to taste.
Serving:
Serve hot, sprinkled with fresh parsley.
Tips and variations:
Baked in the oven: You can also bake the eggplant in the oven. Brush with olive oil, sprinkle with garlic, salt, pepper and bake at 200°C for approx. 20-30 minutes until soft.
With tomatoes: You can also top the garlic eggplant with tomatoes. Add chopped tomatoes to the pan with the eggplant and cook together for a few minutes.
Seasoning: Experiment with other spices, such as oregano, basil, or chili.
Serving: You can serve garlic eggplant as a side dish with meat, fish, or even as a standalone dish, with toast or rice.
