Even old dough can be used to make a wonderful delicacy! 
Great idea! You can make divine delicacies from old bread, rolls or baguettes, so you don’t have to throw away the leftovers. Here are some recipes that will work wonders with stale baked goods:
- Fluffy bread reimagined:
Ingredients:
200 g old bread (roll, bread, baguette)
2 eggs
1 dl milk or cream
salt, pepper, spices (e.g. garlic powder, red pepper)
oil for frying
cheese, ham, vegetables (optional, for the topping)
Preparation:
Dip the bread slices in the seasoned egg mixed with milk.
Fry them in hot oil until golden brown on both sides.
Serve alone or with toppings (cheese, ham, vegetables).
Tip: You can also make it in the oven, so you use less oil.
- Bread pudding:
Ingredients:
200 g old bread (roll, bread, baguette)
2 dl milk or cream
2 eggs
50 g sugar (or to taste)
vanilla flavor, cinnamon (optional)
raisins, nuts, chocolate (optional)
Preparation:
Cut the bread into cubes and put it in a bowl.
Mix the milk, eggs, sugar and spices, then pour over the bread.
Add the raisins, nuts or chocolate (if using).
Pour into a baking dish and bake at 180 degrees for approx. 30-40 minutes.
Tip: You can serve it with vanilla ice cream or whipped cream.
- Breadcrumbs:
You can make perfect breadcrumbs from old bread, rolls or baguettes.
Cut the baked goods into small pieces and spread them out on a baking sheet.
Dry at low temperature (approx. 100 degrees) until completely dry.
Tear them and store in an airtight container.
- Italian bread salad (panzanella):
Ingredients:
200 g old bread (roll, bread, baguette)
fresh tomatoes
cucumbers
red onions
basil
olive oil
vinegar
salt, pepper
Preparation:
Cut the bread into cubes and toast them.
Dice the vegetables and chop the basil.
Mix the olive oil, vinegar, salt and pepper.
Mix the bread, vegetables and dressing and serve.
Additional tips:
You can make crouton soup or salad from old bread.
Leftover bread can be used to make stuffing for meats and vegetables.
You can also make sweet desserts from old bread, such as “bread soufflé”.
