Cottage cheese-filled cookies sound absolutely delightful! They’re a classic for a reason – creamy, slightly tangy filling paired with a soft, sweet cookie is hard to resist. Here’s a recipe that’s likely to be a hit with your family:

Cottage Cheese Filled Cookies Recipe:

Ingredients:

  • For the Cookies:
    • 200g (1 3/4 cups) all-purpose flour
    • 100g (1/2 cup) unsalted butter, softened
    • 100g (1/2 cup) granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon baking powder
    • Pinch of salt
  • For the Filling:
    • 250g (1 cup) cottage cheese (full-fat or semi-skimmed)
    • 50g (1/4 cup) granulated sugar
    • 1 large egg yolk
    • 1 teaspoon lemon zest (optional)
    • 1 tablespoon cornstarch (optional, for thicker filling)
    • Raisins or other dried fruit (optional)
  • Powdered sugar for dusting (optional)

Instructions:

  1. Prepare the Cookie Dough:
    • In a large bowl, cream together the softened butter and sugar until light and fluffy.
    • Beat in the egg and vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt.  
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.  
    • Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.  
  2. Prepare the Filling:
    • In a bowl, combine the cottage cheese, sugar, egg yolk, and lemon zest (if using).
    • If you want a thicker filling, add the cornstarch.
    • If desired, stir in raisins or other dried fruit.
  3. Assemble the Cookies:
    • Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.
    • Take the chilled dough and divide it into small portions.
    • Roll each portion into a ball, then flatten it slightly.
    • Place a teaspoon of the cottage cheese filling in the center of each cookie.
    • Carefully fold the edges of the dough over the filling, pinching them together to seal. You can make them into half moons, or just pinch them into a pouch.
    • Place the filled cookies on the prepared baking sheets.
  4. Bake:
    • Bake for 15-20 minutes, or until the cookies are golden brown.
  5. Cool and Serve:
    • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
    • Dust with powdered sugar before serving, if desired.
