Basic Braided Cake Recipe

Ingredients:

  • For the Dough:
    • 500g (about 4 cups) all-purpose flour
    • 100g (1/2 cup) granulated sugar
    • 1 teaspoon salt
    • 1 packet (7g) active dry yeast
    • 250ml (1 cup) warm milk (or water)
    • 2 large eggs
    • 100g (1/2 cup) unsalted butter, softened
    • 1 teaspoon vanilla extract (optional)
  • For the Filling (Variations Below):
    • Options: Cinnamon sugar, chocolate spread, fruit jam, nut pastes.
  • For the Egg Wash:
    • 1 egg, beaten
    • 1 tablespoon milk
  • For Garnish (Optional):
    • Powdered sugar, sprinkles, chopped nuts

Instructions:

  1. Prepare the Dough:
    • In a large bowl, combine the warm milk, yeast, and a teaspoon of sugar. Let it sit for 5-10 minutes until foamy.
    • Add the remaining sugar, salt, eggs, vanilla extract (if using), and softened butter to the yeast mixture. Mix well.
    • Gradually add the flour, mixing until a soft dough forms.
    • Knead the dough on a lightly floured surface for 5-10 minutes, until smooth and elastic.
    • Place the dough in a greased bowl, cover it, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  2. Shape the Cake:
    • Once the dough has risen, punch it down and divide it into 3 equal portions.
    • Roll each portion into a long rope.
    • Lay the ropes side by side and braid them together.
    • Pinch the ends together to seal.
    • Carefully transfer the braided dough to a greased or parchment-lined baking sheet.
  3. Prepare for Baking:
    • In a small bowl, whisk together the beaten egg and milk.
    • Brush the braided cake with the egg wash.
    • Let the braided cake rest for 20 minutes.
  4. Bake:
    • Preheat oven to 180°C (350°F).
    • Bake the braided cake for 25-30 minutes, or until golden brown.
    • Let the cake cool on a wire rack.
  5. Garnish:
    • Dust with powdered sugar, sprinkle with sprinkles, or top with chopped nuts, if desired.

Filling Variations:

  • Cinnamon Sugar:
    • Mix sugar with cinnamon and spread it over the rolled-out dough before braiding.
  • Chocolate Spread:
    • Spread chocolate hazelnut spread or melted chocolate over the dough.
  • Fruit Jam:
    • Spread your favorite fruit jam over the dough.
  • Nut Paste:
    • Spread nut pastes, like almond paste, over the dough.

Tips for Success:

  • Use warm milk (not hot) to activate the yeast.
  • Knead the dough thoroughly for a smooth and elastic texture.
  • Allow the dough to rise in a warm, draft-free place.
  • Don’t overbake the cake, or it will be dry.
  • If you want to add nuts or chocolate chips to the dough, add them after the first rising, and after you have punched down the dough.
