TREMENDOUS Easter rolls! A hearty recipe! SO EASY! Only 2 eggs.

With only two eggs, these Easter rolls are a breeze to make, and they taste amazing! Here’s a simple recipe:

Ingredients:

  • 550-600 g wheat flour (5 cups)
  • 2 tablespoons sugar  
  • 25 g fresh yeast (1 oz)  
  • 2 eggs + 1 egg yolk
  • 100 g sour cream (1/2 cup)
  • 30 g butter (1 ounce)
  • 5-6 g salt (1/2 teaspoon)
  • 100 g raisins (1/2 cup)
  • 1 tablespoon rum (1 tablespoon)
  • 10 g cinnamon (1/2 tablespoon)
  • 10 g cardamom (1/2 tablespoons)
  • 2 tablespoons orange juice (2 tablespoons)

Equipment:

  • Mixing bowl
  • Stand mixer with dough hook attachment
  • Rolling pin
  • Baking sheet
  • Pastry brush

Instructions:

Combine the flour, sugar, yeast, eggs, sour cream, melted butter, salt, raisins, rum, cinnamon, cardamom, and orange juice in a large bowl.

Knead the dough for 5-7 minutes until smooth and elastic.

Shape the dough into a ball and place it in a lightly greased bowl. Cover with plastic wrap and let rise in a warm place for 30-40 minutes, or until doubled in size.  

Preheat oven to 350°F (175°C). Grease a baking sheet with butter.

Punch down the dough and roll it out into a large rectangle on a lightly floured surface.

Spread the filling over the dough and roll it up tightly.

Pinch the seam closed and tuck the ends under the roll.

Place the roll on the prepared baking sheet and brush with the egg yolk.

Bake for 25-30 minutes, or until golden brown.

Cool on a wire rack before slicing and serving.
