Ingredients to make tomato sauce to preserve Grandma’s recipe!

  • 1 kilo of eggplant
  • 1 kilo of sweet red peppers
  • 1/2 kilo of red or jalapeño peppers
  • 10 cloves of garlic
  • 1/2 cup of frying oil
  • 1/2 bunch of parsley
  • 2 kilos of ripe tomatoes
  • 1 tablespoon coarse salt
  • 1 teaspoon of sugar
  • 2 teaspoons of vinegar
  • 1 cup of oil tea

Procedure

  1. Thoroughly clean the eggplants and red peppers. Place them on a baking tray and roast them in the preheated oven at 200°C, for about 30-40 minutes or until the skin is wrinkled and peels off easily.
  2. Once the eggplants and peppers are removed from the oven, allow them to cool enough to handle or, with the help of a fork, remove the skin. Then, cut them into small pieces.
  3. Proceed to cut the tomatoes into slices and place them in a pot over medium heat, letting them cook for around 1 hour. Once tender, process the tomatoes in the same bowl with a hand blender.
  4. While the sauce continues to cook, heat a cup of oil in a large skillet and add the garlic cloves and hot green chiles, already crushed, cooking them until they acquire a golden tone.
  5. Add the eggplant and roasted peppers to the pan. Cook over medium-high heat for about 30 minutes or until the sauce acquires consistency and all the ingredients are perfectly integrated.
  6. Finally, add the salt, sugar and vinegar, making sure to mix all the elements evenly. Ready to enjoy this delicious homemade sauce!

Packaging Process

  1. Before transferring the sauce to previously sterilized jars, add the chopped fresh parsley and simmer for an additional 5 minutes.
  2. Fill the jars with the hot sauce, making sure to close them tightly with the lid, and then turn them upside down. This inverted position allows for the creation of a vacuum seal.
  3. When rotated, an internal negative pressure is generated that helps to guarantee a hermetic seal, thus prolonging the conservation of the tomato sauce and preventing the entry of air and microorganisms.
