Mallorcan Bread: Good, Soft and Easy to Make at Home!
Pain de Mallorca is a traditional sourdough bread originating from the island of Mallorca, Spain. This rustic bread is made from a mixture of wheat flour and rye flour, and is known for its dense texture and crispy crust, with a slight tart taste from natural fermentation.
Ingredients
- 7 g (2 ¼ tsp) dry yeast
- 125 ml (½ cup) of water
- 185 ml (¾ cup) milk
- 125 ml (½ cup) melted butter
- 60 g (⅓ cup) sugar
- ¼ tsp salt
- 3 egg yolks
- 540 g (4 cups) all-purpose flour
- Melted butter
- Full cream
Preparation
- Whisk 1 tablespoon of sugar and dry yeast in lukewarm water. Let stand 10 minutes.
- Add the warm milk to the yeast solution, then stir in the egg yolks, remaining sugar and melted butter.
- Add the flour and salt to the liquid mixture and mix until the dough forms.
- Cover and let the dough rest for 1 hour.
- Roll out the dough into a rectangle, brush it with a little butter and cut it into 12 strips.
- Roll each strip into a bun as shown in the video. Leave to rise for 1 hour, then brush with cream and bake at 180C/350F for 15-20 minutes, until golden. Sprinkle with powdered sugar before serving.
