Acma Recipes
Acma recipes are traditional Moroccan food recipes that consist of soft, sweet buns, often served for breakfast or at special celebrations. The main ingredients include flour, sugar, milk, yeast and butter. The dough is kneaded until smooth, then shaped into round or S-shaped buns. The buns are then brushed with egg yolk and baked until golden brown and swollen. Acma recipes may vary by region and personal preference, but are generally loved for their sweet taste and soft, chewy texture.
Ingredients for the Açma’s:
about 1000 g of flour
2 teaspoons of sugar
1 tablespoon of salt (slightly rounded)
1 cube of yeast
200 ml of oil
2 eggs size M (reserve 1 egg yolk for brushing)
250 grams of yoghurt
250 ml lukewarm milk
Filling:
soft cheese and chives
For the paint:
reserved egg yolk
Sprinkle:
Chicken bacon, chives or black cumin and/or sesame
Preparation:
1- Mix the milk and the sugar. Then dissolve the yeast in it and leave to rise for about 10 minutes.
Add the rest of the ingredients (except the separated egg yolk) and combine everything in the food processor and knead into a smooth dough.
2- Work the dough in a circle with lightly oiled hands and let it rise in the bowl in a warm place for about 60 minutes.
3- Lightly oil the work surface and place the dough on it, cut out the pieces of dough and form them into balls. Leave for another 15 minutes.
4- Flatten the dough into an oval shape, fill it with the cheese and chive filling and roll it up lengthwise. Now close the roll at the ends and twist once or twice. Then twist them into a kind of knot or bring the ends together.
5- Brush with egg yolk and sprinkle with bacon.
Finally, bake the Acma at 200° for about 25-30 minutes until golden brown
