Orange Pound Cake
Ingredients for 8 people.
1 orange
250 g butter
4 eggs
200 g powdered sugar
200 g flour
½ sachet baking powder
50 g powdered sugar
salt
Wash the orange, grate the zest and squeeze out the juice. Set aside.
Melt 200 g butter.
Preheat oven to 180°C.
Butter a cake tin. Whisk the eggs with the sugar until the mixture whitens. Set aside 4 tablespoons of orange juice and pour the rest into the mixture.
Add the zest and melted butter, a pinch of salt and whisk.
Mix the flour with the baking powder and fold into the mixture. Pour into the tin and bake for 45 minutes.
Leave to cool when removed from the oven.
Pour the reserved juice into a saucepan and add the powdered sugar and 50g butter. Leave to melt over a low heat, then spread the icing over the cake. Leave to harden for 30 minutes and enjoy.
