Brioche with Fried Emerillons: Easy to Make and Simply Gourmet!

Fried Swivel Brioche is a delicious sweet dessert that combines the tenderness of soft brioche with the crunch and sweet taste of fried swivels. It’s an ideal option for breakfast or for a gourmet afternoon tea, and can be customized by adding additional spices or ingredients to create a unique twist on this classic recipe.

Ingredients

  • 250g (8.8oz) flour
  • 100 ml (3.4 fl.oz) hot milk
  • 20 g (0.7 oz) butter, room temperature
  • 20g (0.7oz) sugar
  • 10 g (0.3 oz) fresh yeast
  • 1 egg
  • ½ teaspoon of salt

Preparation

  1. Dissolve a pinch of sugar in lukewarm milk and add the fresh yeast. Set aside for a few minutes to activate.
  2. Whisk flour and salt together. Pour hot milk and an egg into it, knead until smooth. Start adding the softened butter when the dough is formed, while continuing to knead it with a stand mixer or by hand.
  3. Cover the dough with plastic wrap and leave to rest for 1 hour.
  4. Divide the dough into 8 pieces and roll each into a thin rope. Shape each string into a snail shape and place it on a piece of parchment. Cover and set aside for 20 minutes.
  5. Heat the vegetable oil over low heat and gently place the risen donuts in it, removing the parchment paper. Fry each donut for 5-6 minutes on each side.
  6. Cover each donut with sugar and serve hot.
