Vegetable Croquettes: Quick and Easy to Make!
A healthy and delicious alternative to traditional croquettes. They are made with mixed vegetables and flour, then breaded and fried until crispy. Served with a sauce or dressing, these croquettes are a perfect option for a healthy lunch or dinner.
Ingredients
- 1 kg of potatoes
- 200g carrots
- 200g peas (can be frozen)
- 200g green beans (can be frozen)
- 1/4 cup chopped parsley
- salt
- pepper
- 2 eggs
- 100g parmesan
- 3-4 eggs, beaten
- 2 cups of breadcrumbs
Preparation
- Boil and peel the potatoes and carrots.
- Cut carrots, green beans. Mash the potatoes, add 2 eggs, salt, pepper, parmesan.
- Add carrots, peas, asparagus beans, parsley.
- Form balls and press with a flat cup bottom.
- Dip in egg, then in breadcrumbs and fry until golden brown.
