Italian Green Bean Salad
A great balance I find, a nice humble way to enjoy green beans. To be served as an appetizer or side dish to a light dish or even (by doubling the quantities per person) as a single dish with bread on the side.
Ingredients
- 2 onions
- 1/2 red pepper
- 200g fresh or canned green beans
- 2 tbsp olive oil
- A fresh tomato (if not, use canned tomatoes)
- 20 cl of tomato coulis
- Basil
- Garlic powder
- Thyme
- Laurel
Preparation
- Peel the onions and slice them, sweat them in a pan with a little olive oil.
- Slice the red pepper and add it to the pan, cook over low heat.
- If you are using canned beans, please drain them, then rinse them in cold water to remove excess salt and preservatives.
- Stir in the green beans with the bell pepper and fried onions.
- Cut a fresh tomato into slices (you can use canned tomatoes if not) add the tomato cut into slices, cook and finish with the addition of a tomato coulis.
- Season to your liking: basil, bay leaf, garlic powder, thyme, cover and cook over low heat for 1/2 hour, serve!
