Dolce Sponge Brioche Bread
Dolce Sponge Brioche Bread is a soft and moist Italian brioche bread, perfect for breakfast or dessert. The dough is prepared with flour, eggs, sugar, butter and milk, then shaped into balls and sprinkled with granulated sugar before being baked until golden brown.
Ingredients
- 500 gr. flour strength
- 160 g. butter
- 100 grams of white sugar
- 50ml. whole milk
- 18 g. fresh yeast
- 8 g. fine salt
- 4 medium eggs
Preparation
- Brioche dough: In a small bowl, pour the lukewarm milk with the yeast and mix until completely diluted. we have booked. In a large bowl we sift flour, salt and sugar, eggs.
- Add the dissolved yeast and the eggs to the dry ingredients, knead the mixture by hand or machine until everything is incorporated.
- Add the butter, knead again until the dough becomes soft, and until you obtain a fine, shiny and elastic mixture.
- We need to knead for about 20 minutes.
- Reserve the dough in a previously greased bowl, cover with a clean cloth or plastic wrap and leave to rest in a warm place for 30 minutes.
- Brioche bread: We put the dough on a counter and divide it into pieces of about 50 grams, place them in a greased mold or on a tray and leave to ferment again for another 30 minutes.
- We paint the loaves with an egg lightly beaten with salt and let it ferment again in a warm place for another 120 minutes.
- Baking the brioche bread: We preheat the oven to 180°C. We put our plate in the oven and let it cook for about 25 minutes.
- We let it cool on a wire rack.
