4 Light Summer Salads
Light and refreshing summer salad ideas, perfect for hot days. With fresh ingredients such as seasonal fruits and vegetables, nuts and herbs, you can prepare a healthy and delicious meal for lunch or dinner.
1 – Greek salad
Ingredients
- 2 diced tomatoes
- 1 sliced cucumber
- 1/2 yellow bell pepper cut into pieces
- 1/2 chopped red onion
- 80g pitted black olives
- 1 tablespoon olive oil
- 100g of feta
- salt pepper
Preparation
- Put all the ingredients in a salad bowl then mix and place in the fridge.
2 – Shrimp and melon salad
Ingredients
- 150g salad
- 120 g pre-cooked and peeled prawns 100 g pre-cooked chickpeas
- 1 stalk of celery in small pieces
- 2 slices of diced melon
- juice and zest of 1 lemon
- 1 tablespoon olive oil
- salt pepper
Preparation
- Put all the ingredients in a salad bowl then mix and place in the fridge.
3 – Tuna salad
Ingredients
- 80g young lettuce shoots
- 12 cherry tomatoes
- 60 g mozzarella in small balls
- 120 g tuna in nature
- 1 tablespoon olive oil
- salt pepper
Preparation
- Put all the ingredients in a salad bowl then mix and place in the fridge.
4 – Caesar salad
Ingredients
- 150g lettuce
- 150g baked chicken breast
- 1 slice of toasted bread
- 20g parmesan
- For the sauce
- 1 pot of white yogurt 0%
- chives
- 2 tbsp lemon juice
Preparation
- In a salad bowl put the lettuce, the chicken in pieces, the diced toast, and the parmesan.
- Prepare the sauce mix the yoghurt with the chives, lemon juice, salt and pepper then pour over the salad.
