Want a gourmet candy? Don’t go around in circles and put yourself in the kitchen, we present you a recipe for pastry cream that is simple to prepare, which will garnish it to make it tastier and you will surprise more than one! Bonus for this recipe: It is made dairy-free and sugar-free.
Ingredients
- Pastry cream recipe
- 250ml almond milk
- 3 eggs
- 25g fructose
- 10g almond flour
- 10g cornstarch
- 1 teaspoon vanilla extract
- Recipe for cigars filled with pastry cream
- 4 egg whites
- 60g fructose
- A tablespoon of powdered vanilla extract
- 100g almond flour
- ½ cup dairy-free cream
Preparation
- Pastry cream recipe: In a bowl, mix the eggs, fructose and vanilla extract. Add almond flour and cornstarch. Mix everything with a whisk.
- Boil the almond milk. Once boiled, add it to the mixture of eggs and flour gradually while mixing to avoid lumps.
- Then, put everything back in the saucepan over low heat and continue cooking without ceasing to stir, forming a figure eight, until the mixture becomes homogeneous and it acquires the consistency you desire.
- Your cream is ready to garnish your cakes or simply savor it with a spoon.
- Recipe for cigars filled with pastry cream: Preheat the oven to 180°C.
- Start by beating the egg whites firmly.
- Then add the fructose and vanilla extract powder and continue whisking for a few moments, until the mixture is stiff.
- Then add the flour and cream and continue to mix until you get a smooth paste.
- On a baking sheet lined with parchment paper, and using a tablespoon, drop small piles of dough and flatten them to form small discs.
- Put in the oven for 6 to 7 minutes.
- After baking, peel off the discs using a spatula and roll them up, then let them harden.
- Garnish the cigars with pastry cream using a pastry bag or simply a large syringe.
