Super Delicious Chicken with Olives Recipe

A delicious dish, strong in flavor and intense in taste to discover, a simple recipe to discover chicken with olives and candied lemon at home.

Ingredients

  • 1 chicken
  • 250g pitted green olives
  • 1 large onion
  • 5 garlic cloves
  • 1 bunch of flat-leaf parsley
  • Salt and pepper
  • 1 knob of butter
  • Saffron

Preparation

  1. Cut the chicken into pieces. Chop the onion, parsley and garlic.
  2. Boil the olives in water twice, changing the water each time to remove excess salt.
  3. Put the chicken pieces, the chopped onion, the finely crushed garlic and the chopped parsley in a casserole dish with the butter. Colour. Salt very little (the olives still keep the salt they need), pepper and add the saffron.
  4. After browning the meat (to your taste), add the drained olives and cover lightly with water (1.5 glasses is enough).
  5. Leave to simmer gently until the chicken is cooked. There shouldn’t be much sauce left, just the equivalent of a ladle or two.
  6. If you prefer very thick sauces, bind with an egg yolk, otherwise it’s also good without the egg yolk.
