Recipe Moroccan Beghrirs
Here is the recipe for Moroccan beghrirs or pancakes with a thousand holes, simply impossible to miss. It is found in oriental cuisine.
Ingredients
- For about ten medium pancakes
- 200g extra fine semolina
- 100g of flour
- 60 cl of water
- 1 tbsp baker’s yeast
- 1 packet of baking powder
- 1 pinch of salt
- 50g melted butter
Preparation
- In a glass of water, dilute the baker’s yeast with a little warm water.
- In the bowl of the mixer, mix the semolina with the flour, salt and baking powder. Add lukewarm water and blend for a few minutes.
- Pour the batter into a bowl, cover and leave to rest for about 1 hour at room temperature.
- After resting, mix the preparation using a ladle.
- Then, heat a crepe maker (the ideal being to reserve a crepe maker only for the baghrirs because it is preferable to use a crepe maker that has never been in contact with fat).
- When the crepe maker is very hot, pour the batter over the crepe maker using a cup or a bowl (no fat should be added).
- Cook over low heat, bubbles will form.
- Only cook on one side.
- When the pancake is cooked, place it on a plate and brush it with melted butter.
- Do this until the dough is used up.
- Serve with honey, chocolate spread or jam.
