Kofte Rolled Eggplant
Tonight I’m taking you on a trip with me to Turkey with the delicious Kofte eggplant recipe, very tasty and very easy to make.
Ingredients
- 2 Eggplants
- For the Kofte stuffing
- 300 g minced meat
- 1 chopped onion
- 1 tbsp chopped cilantro
- 1 tbsp chopped parsley
- 1 drizzle of olive oil
- Salt
- Pepper
- Paprika
- Cumin
- A little ginger
- Ras el hanout
Preparation
- Cut two aubergines into thin slices, fried in a drizzle of olive oil.
- Mix all the ingredients in a salad bowl.
- Form small sausages and set aside.
- Prepare a tomato sauce that will be placed in the bottom of a baking dish.
- Place the sausages on the eggplant slices, then roll up each slice.
- Place the eggplant rolls as you go into a gratin mould.
- Sprinkle with gruyère and bake for 20-30 minutes in a preheated oven at 180 degrees.
