Pastry Cream Donuts
Ingredients
- For the dough
- 1 tbsp. baker’s yeast
- 3 medium bowls of white flour
- A pinch of salt
- 1 sachet of vanilla sugar
- 1 egg, 1/4 small glass of oil
- 1/4 small glass of melted butter
- A little coloring saffron
- 1 large glass of water
- 1 small glass of milk
- For the stuffing
- Custard
- Apricot jam
- Caster sugar
Preparation
- The dough: dilute the yeast in a little warm water. Put the flour in a terrine, dig a well in the center and add the salt, vanilla sugar, egg, oil, butter, coloring saffron, water and milk.
- Gradually add the yeast and knead well until you obtain a soft dough. Let rise for about 1 hour.
- On a floured surface, roll out the dough with a rolling pin (about 1 cm thick) then cut out circles.
- Place them on a clean cloth and cover them with a second. Let them rest for another 1 hour.
- Immerse the donuts in a hot oil bath, brown them on both sides and drain them in absorbent paper.
