Pastry Cream Donuts

Ingredients

  • For the dough
  • 1 tbsp. baker’s yeast
  • 3 medium bowls of white flour
  • A pinch of salt
  • 1 sachet of vanilla sugar
  • 1 egg, 1/4 small glass of oil
  • 1/4 small glass of melted butter
  • A little coloring saffron
  • 1 large glass of water
  • 1 small glass of milk
  • For the stuffing
  • Custard
  • Apricot jam
  • Caster sugar

Preparation

  1. The dough: dilute the yeast in a little warm water. Put the flour in a terrine, dig a well in the center and add the salt, vanilla sugar, egg, oil, butter, coloring saffron, water and milk.
  2. Gradually add the yeast and knead well until you obtain a soft dough. Let rise for about 1 hour.
  3. On a floured surface, roll out the dough with a rolling pin (about 1 cm thick) then cut out circles.
  4. Place them on a clean cloth and cover them with a second. Let them rest for another 1 hour.
  5. Immerse the donuts in a hot oil bath, brown them on both sides and drain them in absorbent paper.
