These pastries melt in your mouth, but contain very little fat!!! Without butter, milk or flour, they are perfect for celiacs and intolerant people. They are presented beautifully with their perfect spherical shape and that chocolate decoration in the center they almost look like the work of an expert, but they are very simple to make.
You only need 5 minutes to prepare them, they cook in the same time and are finished in a flash!!

They are a real treat, rich in omega 3 and mineral salts, because they are made with peanuts and sesame seeds.
To sweeten them, you will need to use very little sugar: the chocolate in the center will make each morsel even more delicious.

Flourless pastries: ingredients and preparation
For this recipe, get:
- 500 g of roasted peanuts
- 125 g of sugar
- 120 ml of orange blossom water
- egg, 1 egg white only
- sesame, to taste
- dark and white chocolate, to taste
Preheat the oven to 180°.
Toast the sesame seeds for just a few minutes in a non-stick pan, then let them cool completely and keep them close at hand.

Do the same for the peanuts too. Now pour them into the kitchen mixer, add the sugar and blend them to reduce them to a very fine powder.
Transfer everything into a bowl and add the orange blossom water. Knead directly with your hands (clean, of course!).
Prepare two terrines, one with the egg white, the other with the sesame seeds.
Take a small knob of the mixture, make a ball and dip it first in the egg white, then roll it in the sesame seeds.
Continue in this way until all the ingredients are used up, gradually arranging the sweets on the dripping pan lined with baking paper. Now make a small hole in the center of each one.
Bake for just 5 minutes.
Meanwhile, melt the white or dark chocolate in the microwave or in a double boiler.

Remove the sweets from the oven and slide a small amount of chocolate into the hole in the center. Leave to cool and serve.
