Perfect “Msemen” Easy and Fast!
The Quick and Easy “Msemen” Parfait is a simple recipe for preparing delicious and crispy Moroccan pancakes. The dough is prepared from flour, semolina, salt and water, then it is rolled out in a thin layer, brushed with melted butter and folded into a square before being cooked in a pan. These pancakes are perfect for breakfast or brunch, and can be served with honey or jam.
Ingredients
- For the dough
- 500g (3 cups) flour
- 7 g (2 teaspoons) dry yeast
- 250 ml (1 cup) lukewarm water
- 250 ml (1 cup) hot milk
- 15g (1 tbsp) sugar
- 3g (1/2 tsp) salt
- 80 g (1/3 cup) melted butter
- For filling
- 3 potatoes, cooked and mashed
- 90g grated cheese
Preparation
- In a large bowl, combine the flour, baking powder, salt, sugar, lukewarm water and milk.
- Start mixing the ingredients with a spatula, then continue kneading the dough with your hands.
- When the dough becomes elastic, transfer it to a work surface and continue kneading for 3-4 minutes.
- Form a ball and put it in a bowl, cover with plastic wrap or a tea towel and let rise for 1 hour.
- Transfer the dough to a work surface and divide into 6-8 pieces and roll each into a ball.
- Arrange the balls of dough in a baking dish brushed with melted butter. Cover with plastic wrap or a kitchen towel and let rest for 20 minutes.
- In a bowl, combine the mashed potatoes and grated cheese.
- Brush your hands and work surface with melted butter. Put a ball of dough on the surface and shape it into a thin circle with your hands.
- Place the potato and cheese mixture in the center and cover the filling with the dough on each side, forming a square. Continue with the rest of the dough and filling. Let the squares rest for 15 minutes.
- Place a square on a work surface brushed with melted butter and also brush it with butter.
- Press it down with your hands to form a larger square. Continue with the remaining squares.
- Heat a skillet over medium heat. Brush it with melted butter, put the bread in the pan, and also brush it with melted butter.
- Fry for a minute or two, then flip and cook for another 1-2 minutes.
