Basboussa with Almonds and Sweetened Condensed Milk

Basboussa with almonds, this pastry is prepared with fine semolina, sugar, almonds and oriental flavors. It’s just delicious!

Ingredients 

  • For the cake 
  • 320 g of fine semolina
  • 100g almond powder
  • 1 can of sweetened condensed milk (397 g)
  • 100g melted butter
  • 1 packet of baking powder
  • 1 good pinch of salt
  • 1 tablespoon lemon zest
  • 1 tablespoon orange blossom water
  • 250ml water
  • Blanched almonds for decoration
  • For the syrup
  • 100g sugar
  • 300ml water
  • 1 tablespoon lemon juice
  • 2 tablespoons orange blossom water

Preparation 

  1. Start by preparing the syrup by putting the water and sugar in a saucepan. Bring to the boil then lower the heat and reduce for 6 to 8 minutes. Add orange blossom water and lemon juice and cook for 2 minutes! Remove from fire.
  2. Preheat the oven to 190°C.
  3. Mix the semolina, almond powder, baking powder, salt and set aside.
  4. In a large bowl, mix the sweetened condensed milk with the melted butter, add the lemon zest then the semolina mixture, continuing to mix, then finally add the orange blossom water and the water, mix quickly to obtain a homogeneous paste .
  5. Butter and sprinkle with semolina or flour a square or rectangular mold of 24*28 centimeters.
  6. Pour the basboussa preparation into the mold, smoothing the surface.
  7. Draw lines to form squares without going into the bottom.
  8. Place one or two blanched almonds in the center of each square.
  9. Bake for 35 minutes until the basboussa is golden brown.
  10. Once the basboussa is cooked, take it out of the oven and immediately drizzle it with syrup.
  11. Let cool completely before cutting into squares.
