Almond and Coconut Cake Recipe

Ingredients

  • 150 g ground almonds
  • Butter 150g
  • Sugar 200g
  • 100ml coconut milk
  • 50 g grated coconut
  • 100ml plain milk
  • 4 eggs
  • 250g of flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • fruit jam
  • Toasted slivered almonds
  • Powdered sugar

Preparation

  1. Beat butter and sugar until creamy.
  2. Add the eggs one at a time and continue beating.
  3. Flavor with vanilla. Mix the grated coconut with the flour, the baking powder and the ground almonds.
  4. Mix the coconut milk with the milk.
  5. Add the milks alternately with the dry ingredients.
  6. Beat well and pour into a buttered and floured mold 24 cm in diameter.
  7. Sprinkle with slivered almonds. Bake in a preheated oven at 180° for 30 minutes or until the cake is cooked.
  8. Leave to cool then brush with the heated jam and diluted with a little water to make it shine or simply sprinkle with icing sugar
