Almond and Coconut Cake Recipe
Ingredients
- 150 g ground almonds
- Butter 150g
- Sugar 200g
- 100ml coconut milk
- 50 g grated coconut
- 100ml plain milk
- 4 eggs
- 250g of flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- fruit jam
- Toasted slivered almonds
- Powdered sugar
Preparation
- Beat butter and sugar until creamy.
- Add the eggs one at a time and continue beating.
- Flavor with vanilla. Mix the grated coconut with the flour, the baking powder and the ground almonds.
- Mix the coconut milk with the milk.
- Add the milks alternately with the dry ingredients.
- Beat well and pour into a buttered and floured mold 24 cm in diameter.
- Sprinkle with slivered almonds. Bake in a preheated oven at 180° for 30 minutes or until the cake is cooked.
- Leave to cool then brush with the heated jam and diluted with a little water to make it shine or simply sprinkle with icing sugar
