Pineapple Cake

This soft pineapple cake is prepared with a batter made from flour, sugar, eggs and pineapple juice. The cake is baked until golden brown and served with a scoop of vanilla ice cream for a savory and fruity dessert.

Ingredients

  • pineapple slices
  • 550ml pineapple juice
  • 310g flour
  • 200g of sugar
  • 4 tablespoons of sugar
  • 110g melted butter
  • 4 egg yolks
  • 4 egg whites
  • 12g baking powder
  • 4 tablespoons of water
  • Melted butter

Preparation

  1. Line a circular baking dish with paper and butter.
  2. Pour the sugar and water into a saucepan and cook until caramelized.
  3. Pour into the bottom of the mold. Gently add the pineapple slices.
  4. Beat sugar and egg yolks in a bowl. Add the melted butter and continue to mix.
  5. Add sifted flour and baking powder.
  6. Add the pineapple juice and mix well.
  7. Beat the egg whites until stiff. Gently fold into the mixture.
  8. Pour the mixture over the pineapple slices.
  9. Bake for 45 minutes at 160°C (320°F).
