Pineapple Cake
This soft pineapple cake is prepared with a batter made from flour, sugar, eggs and pineapple juice. The cake is baked until golden brown and served with a scoop of vanilla ice cream for a savory and fruity dessert.
Ingredients
- pineapple slices
- 550ml pineapple juice
- 310g flour
- 200g of sugar
- 4 tablespoons of sugar
- 110g melted butter
- 4 egg yolks
- 4 egg whites
- 12g baking powder
- 4 tablespoons of water
- Melted butter
Preparation
- Line a circular baking dish with paper and butter.
- Pour the sugar and water into a saucepan and cook until caramelized.
- Pour into the bottom of the mold. Gently add the pineapple slices.
- Beat sugar and egg yolks in a bowl. Add the melted butter and continue to mix.
- Add sifted flour and baking powder.
- Add the pineapple juice and mix well.
- Beat the egg whites until stiff. Gently fold into the mixture.
- Pour the mixture over the pineapple slices.
- Bake for 45 minutes at 160°C (320°F).
