Cookies without sugar and flour: ingredients and preparation
For this recipe, get:
- 90 g of peanuts
- 90 g of raisins
- 1 tablespoon of flaxseed flour
- 1 egg
Preheat the oven to 140°.

Toast the cashews in a non-stick pan for about 5 minutes. Transfer them to a bowl, wait for them to cool down, then rub them between your hands to free them from the cuticles.
In another bowl, soak the raisins in plenty of warm water, drain and squeeze them, then dry them.
Finely chop the flax seeds in the food processor to transform them into a very fine powder, similar to flour, then put it in a bowl.
Take a spoonful and add it to the cashews and raisins. Now put everything back in the robot and jerk it in order to obtain a fairly thick grain.
Beat the egg with the prongs of a fork and incorporate all the ingredients with a spoon.
Once you have obtained a well-bound mixture, take a knob of it with a spoon and slide it onto the plate. Shape it into a disk. Continue in this way, spacing the biscuits apart, then bake them for about 25 minutes.
