Light and Airy Cottage Cheesecake
Preparation
- Preheat the oven to 160°C.
- Separate the egg whites from the yolks.
- In a bowl, whisk the yolks with the sugar until the mixture whitens.
- Mix the powder with the flour and add them to the preparation, whisking until smooth.
- Add the lemon juice.
- Mix the fresh cream and fromage blanc.
- Add them to the mixture, whisking until smooth.
- Separately, whip the egg whites with a pinch of salt.
- Gradually mix them into the preparation, gently lifting the mass with a rubber spatula.
- Line the inside of a springform pan with parchment paper.
- Pour the preparation and bake for 1h15.
- Leave to cool completely outside the oven before refrigerating overnight.
