Light and Airy Cottage Cheesecake

Preparation

  1. Preheat the oven to 160°C.
  2. Separate the egg whites from the yolks.
  3. In a bowl, whisk the yolks with the sugar until the mixture whitens.
  4. Mix the powder with the flour and add them to the preparation, whisking until smooth.
  5. Add the lemon juice.
  6. Mix the fresh cream and fromage blanc.
  7. Add them to the mixture, whisking until smooth.
  8. Separately, whip the egg whites with a pinch of salt.
  9. Gradually mix them into the preparation, gently lifting the mass with a rubber spatula.
  10. Line the inside of a springform pan with parchment paper.
  11. Pour the preparation and bake for 1h15.
  12. Leave to cool completely outside the oven before refrigerating overnight.
