Chicken Tagine with Candied Lemon and Olives

Ingredients
- 1 chicken cut into pieces or 8 chicken drumsticks
- 1 large onion
- 3 cloves of garlic
- 2 candied lemons
- 1 pinch of saffron pistils
- 1 teaspoon of ginger
- 1 teaspoon of turmeric
- 200g green olives
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped flat-leaf parsley
- 4 tablespoons of olive oil
- Salt and pepper
Preparation
- In a tajine or in a pot, put the olive oil add the finely grated onion, let it melt a little bit then add the washed and drained chicken pieces, the saffron, the ginger and the turmeric.
- Brown for 5 minutes over medium heat, turning the chicken regularly. Add the minced garlic cloves, the chopped herbs, salt and pepper then pour boiling water up.
- Cover and cook for about 40 minutes.
- Remove the chicken from the casserole, add the olives and the lemon wedges, washed briefly under running water to remove the excess salt, then simmer for 10 to 15 minutes uncovered so that the sauce reduces.
- Place the chicken in the oven to brown, brushing it with a little butter.
- In the serving dish, arrange the pieces of chicken, add the olives and quarters of candied lemon then drizzle with sauce.
