Eggplant Zaalouk
Ingredients
- An eggplant
- 3 tomatoes
- A drizzle of olive oil
- 1 tbsp. tablespoon of parsley
- A clove of garlic
- 1 tbsp. teaspoon paprika
- 1 tbsp. teaspoon of cumin
- ½ tsp. teaspoon turmeric
- Salt pepper
Preparation
- Wash and cut the eggplant into cubes, then immerse them in a saucepan filled with boiling salted water, cook for about 20 minutes, remove from the heat and drain.
- Wash, peel and seed the tomatoes, cut them into cubes, add the olive oil, parsley, crushed garlic, paprika, cumin, turmeric, salt and pepper and cook, stirring constantly.
- Once the tomato sauce is well reduced, add the cooked eggplant and simmer for 15 minutes, crushing everything with a fork.
- Zaalouk is eaten hot or cold accompanied by meat skewers for example. Happy preparation and tasting to you!
