Delicious Genovese Recipe
Ingredients
- 4 eggs

Preparation
- Mix the eggs and sugar in a saucepan and bring everything to a medium heat and whisk these two ingredients slowly until a temperature close to 50°C.
- To know the temperature, don’t panic, there are two solutions. Either you have a pastry thermometer, and you just need to check the temperature regularly until it reaches 50°C, otherwise, it’s simpler, take the temperature with your finger. Knowing that our body temperature is 37°C, the sensation of heat on the finger should be warm, but far from burning. As soon as you feel good heat on your finger, remove the pan from the heat.
- Pour everything into a salad bowl and beat with an electric mixer until completely cooled. The preparation becomes whitish and sticks together.
