Zucchini cannelloni is a healthy and original first course to prepare for lunch or dinner, but it can also be part of a good appetizer if you have guests at home. The courgette is a very versatile vegetable that can be used to make many preparations in the kitchen, omelettes, baked, fried, creams, velvety. This vegetable should never be missing in the house.

This recipe is very easy to make, all you need is a sharp knife or a potato peeler and a non-stick grill to cook the zucchini. This recipe is ideal for low-carb diets and people with health problems. The zucchini cannelloni can be filled with stringy, light cheese for those on a diet, a few spoonfuls of fresh tomatoes, minced meat, tuna, a good fat-free cooked ham or whatever you want. But now let’s see the recipe!

Ingredients

  • 2 large courgettes
  • 100 g of cooked ham
  • 60 g of cheese cut into thin slices
  • 100 g of light béchamel
  • 40 g of Parmesan cheese
  • 5 tablespoons of fresh tomato
  • Salt and Pepper To Taste

Preparation

  1. To prepare the zucchini cannelloni, wash and dry the zucchini thoroughly.
  2.  It is advisable to cut the courgettes into very thin slices , using a potato peeler or a very sharp knife.
  3. Place the cut zucchini on a plate and add salt and pepper.
  4. Heat a non-stick grill and cook the courgettes on both sides for a few minutes.
  5. Once the slices have softened, add a spoonful of light bechamel that you will prepare at home and half a slice of ham for each slice of zucchini. For the preparation of the light béchamel, you can click here.
  6. Roll up the slice on itself and arrange on a baking tray lined with parchment paper. Do the same procedure with the other slices until the ingredients are used up.
  7. Once arranged on the pan, add the slices of cheese cut into thin slices on top, brush with a little fresh tomato and finally sprinkle with a little grated cheese.
  8. Cook the zucchini cannelloni at 200°C for about 20 minutes or until you see that the surface turns golden.
  9. Once cooked, remove from the oven and let it cool for a few minutes before serving.
