Zucchini muffins: even the kids will love them!

As we know, children don’t like vegetables very much, but zucchini cooked like this turns into muffins, a cheerful and delicious dish that will invite them to taste it. They’ll love them and if you think about it, they’re also perfect for a little birthday party. In fact, they look like giant pretzels! They are very soft, tasty and satisfying. Try serving them for a finger food aperitif with old friends, still hot and steaming for an explosion of pleasure!

To prepare them, only healthy, genuine and easily available ingredients are needed. The dough is very simple to make, all you need is to put everything in a large container and mix vigorously. The cheese will make these morsels very tasty, giving a stringy texture to every bite!

Zucchini muffins: ingredients and preparation

For this recipe, get:

  • 1 courgette
  • 2 eggs, beaten
  • 60ml of milk
  • 100 g of 00 flour, sifted
  • 2 tablespoons of olive oil
  • 2 tablespoons of fine grain semolina
  • 1 tablespoon of baking powder
  • 50 g of pecorino or parmesan
  • pepe, qb
  • butter, to taste for the ramekins

Grease the cups and preheat the oven to 180°.

Grate your chosen cheese and keep it handy.

Wash and dry the courgettes, trim them and cut them into julienne strips with a grater.

Squeeze them well to remove the liquid from the vegetation (keep it to dress a salad as it is rich in nutritional properties and in flavour). Transfer them to a bowl.

Separately, break the eggs and beat them with the prongs of a fork, then pour them over the grated courgettes, add the milk and sift the flour directly into the bowl. Also add the oil and the semolina, the baking powder and the grated cheese. Season with salt and pepper and start working everything with a spatula, you must obtain a homogeneous and well-bound mixture.

Now transfer two tablespoons of mixture into each cup to fill it up to 2/3 no more, they will grow a lot during cooking!

Bake for 15/20 minutes, a lot depends on the performance of your appliance, do the toothpick test before taking out your muffins and take them out of the oven only if they are completely dry.

Serve them still hot and steaming, they are wonderful!
