Ingredients

  • 400 gr of apples (2 fruits)
  • 80 g of flour
  • 50 g of plain yoghurt at room temperature (or kefir)
  • 2 eggs
  • 1 tablespoon stevia sweetener (or regular sugar alternative)
  • 1 pinch of salt
  • 1 pinch of ground ginger
  • ½ teaspoon ground cinnamon
  • ⅓ teaspoon vanilla sugar
  • ⅓ teaspoon baking soda (or baking powder)
  • Just enough seed oil

Preparation

  1. First break the eggs into a bowl, add the stevia sweetener (or sugar), vanilla sugar and a pinch of salt and beat well with a hand whisk.
  2. Once you have obtained a frothy mixture , add the yogurt, mix, sift and add the flour together with the baking soda and mix without forming lumps.
  3. Now clean the apples by removing the core, cut them into wedges without removing the peel, place them in a non-stick pan with a diameter of 24 centimeters greased and lined with special paper, sprinkle them with cinnamon and ginger and cover them with your mixture.
  4. Finally cover with a lid (this must have a small hole for the steam to escape), turn on the smallest burner, cook for 30 minutes , turn the cake over with the help of an oiled plate, remove the baking paper and let it go for another 5 minutes . before enjoying it.
