Carrot Fries with Garlic and Parmesan, the Accompaniment Par Excellence
The recipe also offers a delicious dip made with Greek yogurt, but the fries can also be eaten plain, simply with an extra sprinkle of parmesan or another dip of your choice.
Ingredients
- 2 large carrots
- 1 tablespoon (15 ml) oil
- ¼ cup (25 g) finely grated parmesan
- 1 tablespoon (15 ml) garlic powder (not to be confused with garlic salt)
- 1 teaspoon (5 ml) pepper
- ¼ cup (10 g) chopped fresh parsley
- ½ teaspoon (2.5 ml) salt
- Dip
- 2 tablespoons (30 ml) plain Greek yogurt
- 1 tablespoon (15 ml) lemon juice
- ½ teaspoon (2.5 ml) garlic salt
- 1 teaspoon (5 ml) pepper
Preparation
- Preheat oven to 400°F/200°C.
- Slice the top and bottom of the carrots and peel as needed.
- Cut the carrots in half, then cut each half into thirds lengthwise.
- In a large bowl, place all the carrot sticks.
- Pour all the other ingredients (except the ingredients to make the dip) over the carrot sticks.
- Mix everything well, so as to coat the carrots with spices and parmesan.
- Spread the carrots on a baking sheet, arranging them in an even layer.
- Bake for 15-20 minutes (for more or less crispy fries depending on the case).
- While cooking, prepare the dip. Pour all the ingredients for the dip into a small bowl and mix well.
- When the fries are finished cooking, let them cool for 5 minutes on the baking sheet before transferring them to plates.
- Sprinkle the carrots with additional Parmesan and some chopped parsley, if desired.
- Serve the carrot fries hot with the dip and a main dish of your choice or serve as an appetizer or starter.
