Kofte-style rolled eggplant

This evening I’m taking you on a trip with me to Turkey with the delicious recipe for Kofte-style eggplant rolls, very tasty and very simple to make.

Ingredients

  • 2 eggplants
  • For the Kofte stuffing
  • 300 g of minced meat
  • 1 chopped onion
  • 1 tbsp chopped coriander
  • 1 tbsp chopped parsley
  • 1 drizzle of olive oil
  • Salt
  • Pepper
  • Paprika
  • Cumin
  • A little ginger
  • Ras el hanout

Preparation

  1. Cut two eggplants into thin slices, fried in a drizzle of olive oil. ⁣
  2. Mix all the ingredients in a salad bowl. ⁣
  3. Form small sausages and set aside. ⁣
  4. Prepare a tomato sauce which will be placed in the bottom of a baking dish.
  5. Place the sausages on the eggplant slices, then roll each slice.⁣
  6. Place the eggplant rolls gradually in a gratin mold.
  7. Sprinkle with Gruyere cheese and bake for 20-30 minutes in an oven preheated to 180 degrees.
