Kofte-style rolled eggplant
This evening I’m taking you on a trip with me to Turkey with the delicious recipe for Kofte-style eggplant rolls, very tasty and very simple to make.
Ingredients
- 2 eggplants
- For the Kofte stuffing
- 300 g of minced meat
- 1 chopped onion
- 1 tbsp chopped coriander
- 1 tbsp chopped parsley
- 1 drizzle of olive oil
- Salt
- Pepper
- Paprika
- Cumin
- A little ginger
- Ras el hanout
Preparation
- Cut two eggplants into thin slices, fried in a drizzle of olive oil.
- Mix all the ingredients in a salad bowl.
- Form small sausages and set aside.
- Prepare a tomato sauce which will be placed in the bottom of a baking dish.
- Place the sausages on the eggplant slices, then roll each slice.
- Place the eggplant rolls gradually in a gratin mold.
- Sprinkle with Gruyere cheese and bake for 20-30 minutes in an oven preheated to 180 degrees.
