Unmixed Leek, Carrot & White Bean Detox Soup
To cleanse and re-energize the digestive system, we rely on a detox soup that is easy to prepare and enjoy all year round.
A tasty soup with leeks, carrots and white beans. Add fresh herbs, nuts and a drizzle of oil when serving for a complete, healthy and detoxifying meal.
Ingredients
- 2 leeks
- 4 large carrots
- 1 white onion
- 4 cloves of garlic
- About 500 g of white beans (if canned, remove any water)
- Thyme, rosemary, bay leaf
- Pinch of salt
- 1 liter of water
- Optional: walnuts
- Fresh parsley
- 4 tbsp. to s. malted yeast
- oil (olive, camelina, flax)
Preparation
- Prepare the vegetables: cut the leek, carrots, onion and garlic.
- Place all the cut vegetables, thyme, bay leaf and rosemary in a casserole dish. Add 1 liter of water.
- Cover and simmer over very low heat for about 45 minutes with a very light boil. For example, on a fire that goes up to 10, don’t put it any hotter than 4.
- When the vegetables are cooked, add the white beans, then blend 1/3 of the soup. You can mix directly in the casserole dish or take some of the vegetables and white beans and put them in the blender. Using a blender provides a smoother texture than mixing directly in the casserole dish.
- Add the malted yeast, then simmer over very low heat just long enough to warm the white beans. If your soup is too liquid for you, let it simmer without a lid so that the broth evaporates a little.
- When serving, add walnuts, chopped parsley and a drizzle of oil to each bowl. Enjoy this soup accompanied by a good wholemeal sourdough bread.
