Don’t throw away the watermelon peels! 3 Tasty Recipes
Watermelon skin is underestimated because it very often ends up in the trash. However, there are many ways to recycle it and use it for your health
1 – Watermelon peel jam
- 1 kg watermelon rinds in strips (removed the green)
- 750 g of sugar
- 1 lemon juice
- Place all ingredients in a jam pot (or saucepan). Cook over medium heat until 105°C (around twenty minutes). If you don’t have a sugar thermometer, check the cooking by pouring a drop of jam onto a plate: it should set.
- Pour into jars, close them and turn them over until completely cooled.
2 – Watermelon skin in vinegar
- 10 cardamom pods
- 4 cloves
- 100 g of coarse salt
- 2 cm grated ginger
- 25 cl of water
- 50 cl of vinegar
- 300 g of granulated sugar
- 1 kg of watermelon peel
- Cut the bark into strips and remove the green skin.
- Soak them overnight with coarse salt.
- The next day, drain and dry them.
- In a saucepan pour the water, vinegar and sugar.
- Bring to the boil and add the peels.
- Add the spices and cook over low heat for an hour.
- Place in a jar and wait until the preparation has cooled before closing it.
- Leave for a month before consuming.
3 – Salted watermelon skin
- 250 g watermelon skin
- 250 g of sugar
- 50 ml of white vinegar and half a lemon.
- Cut the skin into small cubes and leave it to soak in salted water overnight.
- Drain, put in a saucepan, covered with cold water and simmer for 30 minutes.
- Then drain it. Put together the sugar, vinegar, water, lemon, a cinnamon stick and a few cloves and boil for at least 10 minutes to make the syrup.
- Add everything to the watermelon skin and cook until it becomes transparent. Put it in pots according to the previous procedure.
