Real onion soup

Ingredients:

  • 4 to 5 large yellow onions, thinly sliced
  • 2 tablespoons of butter
  • 1 tablespoon of olive oil
  • 1 tablespoon flour
  • 6 cups beef stock (preferred) or vegetable stock
  • 1 cup dry white wine (optional)
  • Baguette, sliced
  • 1 to 2 cloves of garlic, finely chopped
  • 1 to 2 cups grated Gruyère cheese
  • Salt and ground black pepper to taste
  • Sprigs of fresh thyme (optional)

Instructions:

  1. Melt the butter and olive oil in a large saucepan over medium heat. Add the sliced ​​onions and fry gently until caramelized and golden brown. This may take about 30 to 40 minutes. Make sure they don’t burn.
  2. Sprinkle the flour over the caramelized onions and stir to combine. Cook for a few minutes to eliminate the raw flour taste.
  3. Pour the dry white wine into the pan to deglaze and scrape up any brown bits from the bottom. Simmer for a few minutes until the wine reduces slightly.
  4. Add the beef stock (or vegetable stock) to the pan. Bring to a boil, then reduce heat and simmer for about 20 to 30 minutes to allow the flavors to develop.
  5. In the meantime, prepare the slices of baguette by lightly toasting them. You can rub them with chopped garlic for extra flavor.
  6. Preheat the oven to grill mode.
  7. When the onion soup is ready, season with salt and ground black pepper.
  8. Place ovenproof bowls on a baking sheet. Fill the bowls with the onion soup.
  9. Arrange the slices of toasted baguette on top of the soup in each bowl.
  10. Sprinkle grated Gruyère cheese generously over the bread slices.
  11. Place the ramekins under the broiler for a few minutes until the cheese is melted and lightly browned.
  12. Watch carefully to prevent the cheese from burning.
  13. Once the cheese is melted and brown, carefully remove the bowls from the oven (they will be hot) and serve immediately.
