Real onion soup
Of course, here is the classic recipe for onion soup, a comforting and delicious dish of French origin:
Ingredients:
- 4 to 5 large yellow onions, thinly sliced
- 2 tablespoons of butter
- 1 tablespoon of olive oil
- 1 tablespoon flour
- 6 cups beef stock (preferred) or vegetable stock
- 1 cup dry white wine (optional)
- Baguette, sliced
- 1 to 2 cloves of garlic, finely chopped
- 1 to 2 cups grated Gruyère cheese
- Salt and ground black pepper to taste
- Sprigs of fresh thyme (optional)
Instructions:
- Melt the butter and olive oil in a large saucepan over medium heat. Add the sliced onions and fry gently until caramelized and golden brown. This may take about 30 to 40 minutes. Make sure they don’t burn.
- Sprinkle the flour over the caramelized onions and stir to combine. Cook for a few minutes to eliminate the raw flour taste.
- Pour the dry white wine into the pan to deglaze and scrape up any brown bits from the bottom. Simmer for a few minutes until the wine reduces slightly.
- Add the beef stock (or vegetable stock) to the pan. Bring to a boil, then reduce heat and simmer for about 20 to 30 minutes to allow the flavors to develop.
- In the meantime, prepare the slices of baguette by lightly toasting them. You can rub them with chopped garlic for extra flavor.
- Preheat the oven to grill mode.
- When the onion soup is ready, season with salt and ground black pepper.
- Place ovenproof bowls on a baking sheet. Fill the bowls with the onion soup.
- Arrange the slices of toasted baguette on top of the soup in each bowl.
- Sprinkle grated Gruyère cheese generously over the bread slices.
- Place the ramekins under the broiler for a few minutes until the cheese is melted and lightly browned.
- Watch carefully to prevent the cheese from burning.
- Once the cheese is melted and brown, carefully remove the bowls from the oven (they will be hot) and serve immediately.
