Ingredients
- 3 medium zucchini
- 300 gr of grated light mozzarella (or scamorza)
- 1 egg
- 1 clove of minced garlic
- 1 handful of grated Parmesan
- Just enough salt
Preparation
- First of all, trim the courgettes, place them in a colander placed in a boule, salt them, stir with your hands to let out the excess water and squeeze them.
- Now do the same thing with the mozzarella (keep some aside and cut it into cubes) , transfer it to a bowl, add the courgettes, the Parmesan cheese, the egg and the minced garlic, then mix well with your hands or a spoon .
- Now cover a dripping pan with special paper, spread the dough obtained on it, then compact it with the back of your hands.
- Finally put it to cook in the preheated oven for 25 minutes at a temperature of 200°C , at the end stuff it with the leftover mozzarella and let it go for another 10 minutes .
- Once cooked, let it cool for a few minutes before cutting into slices and serving.
