Vegetable pies (or muffins) , undoubtedly, can help you create an exceptional lunch or dinner that makes everyone happy. In fact, it is a decidedly tasty recipe that manages to tempt even the most reluctant towards vegetables.

Ingredients
- 1 large zucchini trimmed and diced
- 1 carrot peeled and diced
- 1 chopped onion
- 3 tablespoons of flour
- 2 eggs
- 50 g of grated cheese (such as Galbanino light)
- 4 tablespoons of water
- 1 minced garlic clove
- 1 bunch of chives cut into rings
- 1 tablespoon of extra virgin olive oil
- 1 knob of butter
- oregano and salt to taste
Preparation
- First, pour a drizzle of oil and the butter into a non-stick pan, melt the latter, add the chopped onion, mix and let it brown.
- Now add salt, add the diced courgette and the diced onion, stir, season with a little salt, cover with a lid and cook for 10 minutes over medium heat .
- Now place the chives cut into rings in a bowl, add the onion, courgette and carrot, sauté in a pan and mix well.
- Break the eggs into a clean bowl, add ⅓ teaspoon of salt, beat them with a hand whisk, add 1 tablespoon of oil and the flour, then mix with the spatula to obtain a mass , pour in the water, stir to make the all a creamy and homogeneous batter and flavored with oregano and minced garlic clove.
- Incorporate the batter into the vegetables, mix with a spatula to ensure that the ingredients bind to each other, then set aside for a moment.
- Once this is done, oil the cups of a muffin mold, fill them with two spoonfuls of dough , sprinkle the surface with grated cheese and cover with another two spoonfuls of mixture.
- Finally put them to cook in a preheated oven for 15-20 minutes at a temperature of 180°C , at the end wait a moment for the muffins to settle and enjoy them.
