  • 1 pumpkin (medium)
  • 2 bay leaves
  • Salt to taste
  • 3 cloves garlic (finely chopped)
  • 500 ml of vinegar
  • 1 liter of water
  • Oregano to taste
  • Extra virgin olive oil

Preparation

  1. Start by peeling the pumpkin and cutting it into thin slices. After cutting it, place it in a strainer, add salt and put weight on top, like a saucepan full of water. Let it drain overnight to remove excess water.
  2. The next day, in a saucepan, combine the water, vinegar, bay leaves, and pumpkin slices. Bring this mixture to a boil and cook for an additional three minutes.
  3. Remove the pumpkin slices and place them on absorbent paper. Let them dry for at least two hours.
  4. Once dry, fill sterilized jars with the pumpkin slices, add the minced garlic, sprinkle with oregano and cover with olive oil to the top. Make sure the squash is completely submerged in the oil.
  5. Once filled, close the jars tightly and let them rest for 1 or 2 days before consuming. For long-term storage, you can boil the closed jars for 20 to 30 minutes in a large saucepan of water. Then let them cool upside down and store them in a cool, dark place. In this way, pumpkin in oil can last up to a month.
