- – 180 g of sugar
- – 2 album
- – a teaspoon of vanilla essence

- – icing sugar to taste

The preparation
The first thing is to beat lightly with a fork 2 albums1. Now mix 260 grams of toasted and rather finely chopped hazelnuts with a spatula with 180 grams of sugar.
Now, little by little, we’re incorporating this mix of hazelnuts and sugar with the egg whites. After mixing for a while, add a teaspoon of vanilla extract, then continue to incorporate the hazelnuts and egg whites.
You need to get a sticky but malleable compound. At this point we take small quantities of dough with our hands, give them a round shape and then pass them first in the granulated sugar and then in the icing sugar.
We place them on a baking sheet lined with baking paper, then with the handle of a wooden spoon we make a hole in the center on each one. Well, at this point let’s cook in a preheated fan oven at 160 degrees for about twenty minutes.
After 20 minutes, remove from the oven and leave to cool, then soften a little Nutella in the microwave (or in a bain-marie) and pour it into a pastry bag, then fill the holes in our sweets with it and if we want we can add hazelnuts or a whole hazelnut.
