Chocolate and raspberry parfait: it doesn’t get any better than this! Without cooking
This cold dessert is the most loved recipe on the web. Very easy to make, ready in less than 10 minutes. It consists of several layers alternating with ladyfingers, a raspberry coulisse and a soft and airy cream and ricotta cream. To crown it all, a grated chocolate that will make the tasting indispensable and irresistible. It doesn’t involve any cooking, but a rest in the refrigerator for an hour before being served. Keep it at 4°, it will remain delicious for days and days.

For this recipe, get:
- 250 g of frozen raspberries
- 80 grams of sugar
- 30 grams of corn starch
- juice of 1 orange
- ladyfingers biscuits, to taste
- 150 g of cottage cheese
- 50 g of icing sugar
- 150 ml of cream
- 15 g of cocoa
chocolate bar, to decorate
In a non-stick pan, put the frozen raspberries, sugar and cornstarch. Turn on the gas over low heat and let the cream thicken. You will notice that the fruit gradually “unravels” and blends with the other ingredients in a bright red sauce.
Turn off the stove.
Divide the orange in two and squeeze it.
Now take a rectangular baking dish and line the bottom with ladyfingers. Arrange them next to each other, then brush them with orange juice. Cover them with the raspberry coulisse and level the surface with the spatula. Repeat the operations to make a second layer of biscuits soaked in orange juice.
Put the well-drained ricotta in a bowl, add the icing sugar and mix with a spatula to uniform. Pour in the cream and start whipping everything with the electric mixer. When the mixture appears very thick, insert the cocoa and distribute it with the spatula.
Now use this cream to make the last layer of your cake. Level the surface and grate the chocolate bar to decorate.
Place in the refrigerator for at least an hour to firm up, then enjoy this marvel!
