Vanilla cookies: ingredients and preparation
For about 32 biscuits, get yourself:
- 90 g of sugar
- 80 ml of vegetable oil
- 1 egg + 1 yolk
- 250 g of flour
- 1 teaspoon baking powder (5-6 g)
- vanillin or vanilla sugar, 1 sachet
- a pinch of salt
- powdered sugar to decorate
Preheat the oven to 180°.
Line the dripping pan with the special paper and keep it close at hand.
Break the egg into a bowl, then add the yolk, sugar and salt: mix everything with the hand whisk to obtain a well-bound mixture. Now add the oil, mix again. When you make a sort of cream, then add 2 tablespoons of flour, the vanillin and the baking powder and stir vigorously in the same direction to get them absorbed. At this point, sift the remaining flour directly into the bowl and mix with the spatula. Do it in two different takes so that it can blend perfectly.
Continue to knead with your hands (clean, of course). Make a loaf and divide it into 4 parts. With each one, form a long, narrow sausage. Cut it into chunks of about 4 centimeters each and arrange them well spaced on the plate.
Bake for 15 minutes, but remember that a lot depends on the performance of your oven; check them while cooking, they should lightly brown on the surface. Take them out of the oven and let them cool completely, then dust them with icing sugar.
