You may not have smelled such an inebriating scent before, but the surprises of this lemon cake don’t end there! Light, airy, but above all delicious and yet dietetic. Each slice, in fact, provides only 170 calories! Unbelievable, but true!

Just a quarter of an hour to prepare it, 40 minutes to cook it, the time it needs to cool down and it will be a feast for the taste buds. A full of taste and vitamin C at the same time, thanks to the presence of citrus fruit, will allow you to combine business with pleasure, transforming a moment of sweetness into a healthy occasion.

Offer it to your little ones, they will be greedy. With your old friends, then you will make a great impression: accompany her with a tea, in order to make an appointment of chats and confidences, a riot of gluttony.

Diet lemon cake: ingredients and preparation

For this recipe, get:

  • 60-70ml of milk
  • 250 g of flour
  • 150 g of light ricotta
  • 100 gr of stevia sweetener (or 200 gr of normal sugar)
  • 70ml of oil
  • 4 eggs
  • 16 g of baking powder
  • 1 lemon juice
  • 1 grated lemon zest
  • just enough powdered sugar for dusting

With these doses, you will make about 12 portions.

Before starting, bring all the ingredients to room temperature, keeping them out of the refrigerator for at least half an hour.

Preheat the oven to 180°. Grease and flour a springform pan with a diameter of 22/24 centimetres, then remove the excess by turning it upside down on the sink.

Sift the flour and baking powder 2 or 3 times to obtain a very fine powder.

Drain the ricotta and place it in a bowl. Pour in the milk and oil, then grate the lemon zest, add the filtered juice and mix with an electric whisk.

In a separate container, break the eggs, add the stevia or sugar, mix the ingredients with the mixer for 7/8 minutes, so as to double the volume. At this point, add the ricotta, mix carefully again with the electric whisk, finally incorporate the flour and baking powder in stages.

Now transfer everything into the pan and bake for 45 minutes at a temperature of 180°.

Always do the toothpick test before taking it out of the oven and remove the cake only when it is dry.

Leave to cool before unmolding, then dust with icing sugar and enjoy.
