Young shoots are collected from April to June, they appear earlier in warm areas, later at higher altitudes.
We collect the smallest shoots possible, a maximum of 5 cm long, ideally around 3 cm.

Syrup – 100 year old recipe
We need:
– young tips
– cane sugar
– lemon not treated with chemicals
Preparation:
Rinse the young tips and let them drain.
Arrange a 3 cm layer of sprouts in a larger jam jar.
Cover with a 1.5cm layer of cane sugar, place lemon slices on top and repeat this process until the glass is full (finish with a layer of sugar).
Gently press, cover with cellophane and secure with elastic or twine.
Place the container in a sunny location, preferably on a windowsill, and let it sit for at least 3 weeks.
Then strain the syrup through cheesecloth, fill in jars, close and store in the refrigerator.
Bonus:
You can also add some plantain leaves, dandelion blossoms or leaves and a cinnamon stick to the jars.
Usage:
1. Even children like this syrup because it has a nice sweet taste.
For cough and cold, 1-3 spoons are used, it can be added to tea.
2. One teaspoon a day acts as a prevention against diseases such as colds, strengthens immunity and helps in recovery.

Honey from tips
We need:
500 g tips
500 ml. water
500 g cane sugar
1 large organic lemon
1 teaspoon of citric acid
Preparation:
Rinse the tops, cover with cold water, slowly bring to a boil and let simmer for 20-30 minutes.
Then when it cools, add a lemon cut into slices and let it sit for at least 24 hours.
Stir occasionally and pierce the lemon with a fork.
Drain the next day.
We squeeze the tops thoroughly, add sugar to the liquid and cook very slowly over low heat until a thick honey mass is formed – something in between honey and jam.
Honey solidifies a little more after it cools.
Pour the warm mass into sterilized and dry jars, turn them upside down for a few hours and then store them in the refrigerator.
